This is the Italian Grilled Cheese recipe.

- Cooking: 5 min - 10 min
- 4 panini breads
- 6 1/2 oz (200 g) Canadian Mozzarella sliced
- 1/4 cup (60 mL) grated Canadian Parmesan
- 1/4 cup (60 mL) pesto
- 2 grilled bell peppers sliced
Slice paninis in halves. Spread pesto onto each half. Evenly distribute both cheeses and bell peppers on four bottom halves, then cover with four top halves.
Heat skillet over medium-low heat.
Cook sandwiches approximately 5 minutes on each side while applying pressure to flatten. Panini sandwiches are ready when bread is browned and cheese is melted.
Serve with a tasty arugula salad.
