Ingredients

  • 4 chicken breasts
  • 1 tbsp (15 mL) fresh ginger minced
  • 1 tbsp (15 mL) soya sauce
  • 1 tbsp (15 mL) honey
  • Salt and freshly ground pepper
  • 3 oz (90 g) Le 1608 from Charlevoix cheese cut into 4 sticks
  • 1/4 cup (60 mL) flour
  • 1 egg
  • 1 cup (250 mL) panko breadcrumbs
  • 3/4 cup (175 mL) Le 1608 from Charlevoix cheese grated
  • Honey to taste
  • 1 tbsp (15 mL) lemon zest

Preparation

Cut chicken breasts in half through their thickness, but not all the way, so they open up like a book.

In a bowl, mix ginger, soya sauce, honey, salt and pepper. Add chicken breasts and coat them inside and out. Put a stick of cheese inside each chicken breast and close well.

Preheat oven to 425oF (220oC).

In a shallow dish, add flour, salt and pepper. In a second shallow dish, beat egg with a bit of water. In a third shallow dish, mix panko breadcrumbs with grated cheese.

Coat chicken breasts with flour; dip into egg mixture and then into breadcrumb mixture. Make sure chicken is well coated. Place chicken breasts on a parchment-lined baking sheet.

Bake 15 to 20 minutes or until chicken is completely cooked.

Serve with a drizzle of honey and a sprinkle of lemon zest.
