Marinated Shrimp and Pork Kabobs

Ingredients

  • 8 large shrimp (21 to 25 per pound) shelled and deveined
  • 8 pork cubes 3/4 in (2 cm)
  • 3 tbsp (45 mL) oyster sauce
  • 2 tbsp (30 mL) lime juice
  • 3 tbsp (45 mL) olive oil
  • 2 tbsp (30 mL) shallots chopped
  • 1/3 cup (80 mL) dry white wine
  • 1/4 cup (60 mL) 35 % cream
  • 1 tomato diced
  • 1 green onion chopped
  • Salt and pepper to taste

Preparation

Marinate shrimp and pork cubes in oyster sauce, lime juice and olive oil for 15 minutes. Stir often.

In a saucepan, combine shallots and dry white wine and reduce to three-quarters of original quantity. Add cream, tomato and green onion. Reduce again for about 2 minutes and season with salt and pepper.

Alternate pork and shrimp on wooden skewers and broil gently on preheated grill or on baking sheet for 4 minutes. Place in 325°F (160°C) oven, cover and cook for 2 to 3 minutes longer.

Remove kabobs from oven, place on individual plates or a serving dish and cover with sauce. Can be served plain white rice, vegetable rice or wild rice.
