- 6 russet potatoes peeled and quartered
- 1/4 cup (60 mL) warm milk
- 2/3 cup (150 mL) Canadian Mascarpone
- Salt and freshly ground pepper

Preparation
In a large saucepan, cook potatoes in boiling salted water for 20 minutes or until tender; drain.
Mash potatoes; add milk and Mascarpone.
Season with salt and pepper and serve immediately.
