Mashed Potato à la Québécoise

Ingredients
- 8 bacon slices
- 10 large potatoes peeled and quartered
- 1 cup (250 mL) Milk
- 1/4 cup (60 mL) butter
- 3 tbsp (45 mL) chives or green onions finely chopped
- 2 tbsp (30 mL) fresh parsley finely chopped
- Salt and pepper to taste

Preparation
Cook bacon until crisp. Dry on paper towel and chop finely. Set aside.
Cook potatoes and drain. Mash and stir in butter and milk. Season to taste. Transfer to serving platter and sprinkle with chives, bacon and parsley.
