Mexican Pork Tacos

Ingredients
- 3 tbsp (45 mL) butter
- 1 onion chopped
- 8 oz (250 g) lean ground pork
- 1 tbsp (15 mL) crushed chili peppers
- 1 garlic clove chopped
- 3 tbsp (45 mL) tomato paste
- 1/3 cup (80 mL) tomato juice
- Salt and pepper to taste
- 1/2 cup (125 mL) beer
- 4 standard taco shells or 8 small taco shells
- 1 tomato diced
- 1/3 cup (80 mL) grated Mild Canadian Cheddar cheese

Preparation
In a large pan, heat butter and add onion and pork. Cook over medium heat for 3 to 5 minutes, stiring constantly. Add chili peppers, garlic, tomato paste and tomato juice. Mix well. Cover and cook over very low heat for 25 minutes.
Remove cover and stir well. Season with salt and pepper and add beer. Cook over low heat for 15 to 20 minutes. Set aside and let mixture cool once liquid has evaporated.
Shred lettuce leaves and line tacos. Add ground pork, diced tomato and Mild Canadian Cheddar cheese.
