Pumpkin pizza

Ingredients

  • 1 ½ cups (7 oz / 200 g) bacon, diced or in strips
  • 2 tbsp (⅔ oz / 10 ml) maple syrup
  • 2 ¼ cups (7 oz / 200 g) sliced mushrooms
  • 1 cup (8 oz / 250 ml) Canadian sour cream
  • 2 ½ cups (10 ½ oz / 300 g) shredded Canadian mozzarella
  • Pepper, to taste
  • 1 pinch nutmeg
  • 1 pizza dough (560 g)
  • 1 pinch flour
  • 1 egg yolk
  • 1 tbsp (⅓ oz / 5 ml) Canadian milk
  • Tools
  • 3–4 in (8–10 cm) cookie cutter
  • Kitchen twine (for shaping the pumpkins)

Preparation

To make the filling, cook the diced bacon in a skillet for 4 minutes. Add the maple syrup and let it caramelize lightly. Remove the caramelized bacon and place it in a bowl. Add the sliced mushrooms to the same skillet and cook for 5 minutes, until they lose some moisture and turn slightly golden. Transfer the mushrooms to the bowl with the bacon. Add the sour cream and mozzarella to the bacon and mushroom mixture in the bowl and stir with a spatula. Season with pepper and nutmeg.

Roll out the pizza dough on a lightly floured surface and, using an 8–10 cm (3–4 in) cookie cutter, cut 12 circles (one per mini-pizza). Place 1–2 tablespoons of the filling in the center of each circle. Fold the edges of the dough over the filling and pinch to close. The result should resemble a ball. Cut 36 pieces of twine about 30 cm (12 in) long and tie each pizza ball in a cross shape (like a small package) without pulling too tight so the dough can rise while baking. Use 3 pieces of twine per dough ball.

Beat the egg yolk with the milk and brush each mini-pizza. Place the pizzas on a baking sheet and bake in a preheated oven at 390 °F (200 °C) for 15 minutes. Bake until the pizzas are golden and puffed. Remove the twine before serving. Enjoy!
