Ingredients
- 1 1/3 cup (330 mL) assorted vegetables to taste (zucchini, bell peppers, broccoli, celery, mushrooms), diced
- 1 cup (250 mL) Canadian Mozzarella cheese, shredded
- 1/4 cup (60 mL) pizza sauce or tomato sauce
- 12 whole wheat or white mini pitas halved

Preparation
Preheat oven to 350 °F (180 °C) or barbecue to medium-high heaté
In a medium bowl, combine vegetables, cheese and pizza sauce. With a small spoon, stuff filling into pockets of pita halves. If oven-baked, place on non-stick baking sheet and bake for 8 to 10 minutes or grill on barbecue for about 5 minutes or until pitas are toasted and cheese is bubbling, turning once.
Serve immediately.
Tips
Leftover cooked diced chicken or lean ham and pineapple make for tasty variations. Kids can help mix the ingredients and stuff the pitas.
