Moist Pineapple Meatballs

These sweet and tender pineapple meatballs make the perfect appetizer. Or serve on rice as a meal.

Moist Pineapple Meatballs

Ingredients

  • Meatballs:
  • 1 1/2 lbs (675 g) ground beef
  • 1/2 cup (125 ml) fine breadcrumbs or oatmeal
  • 1/4 cup (60 ml) minced onion
  • 1 large egg, slightly beaten
  • 1/2 cup (125 ml) Canadian milk
  • 1 can (398 ml) pineapple tidbits or chunks
  • 1/4 tsp (1 ml) salt
  • 1/2 tsp (2 ml) dry mustard
  • Sauce
  • 3/4 cup (180 ml) ketchup
  • 1 can (398 ml) pineapple tidbits or chunks

Preparation

Preheat oven at 350 °F (180 °C)

Mix beef, breadcrumbs, onion, egg, milk, pineapple, salt and dry mustard.

Shape into one-inch balls

Bake on cookie sheet for 25 – 30 minutes until lightly browned

Place into casserole dish

Blend ketchup and pineapple tidbits (with juice) and pour over meatballs pineapple
