Moka Cake with Kiwi Sauce

Ingredients

  • 1 1/2 cup (375 mL) sugar
  • 1 cup (250 mL) softened butter
  • 3 eggs beaten
  • 2 tsp (10 mL) vanilla extract
  • 3 cups (750 mL) all-purpose flour
  • 1 cup (250 mL) strong filter moka coffee
  • 2/3 cup (160 mL) 15 % or 18 % cream
  • 1 1/2 tsp (7 mL) baking powder
  • 1 1/2 tsp (7 mL) salt
  • Kiwi Sauce
  • 1/4 cup (60 mL) water
  • 1/4 cup (60 mL) Milk
  • 1/4 cup (60 mL) sugar
  • 6 kiwis peeled
  • 2 tbsp (30 mL) cornstarch diluted in a little water

Preparation

Preheat oven to 350 °F (180 °C).

In large bowl, mix sugar, butter, eggs and vanilla extract with electric mixer until smooth. Gradually beat in remaining ingredients. Mix well until smooth.

Pour into buttered tube pan and bake for 1 hour or until toothpick inserted in centre comes out clean. Remove from oven and let cool for 15 minutes before removing cake from pan. Serve on dessert , lightly covered with Kiwi Sauce.

Kiwi Sauce:

In saucepan, boil water, milk, sugar and kiwis for 5 minutes, stirring occasionally. Stir in diluted cornstarch and continue boiling for 1 minute while stirring. Purée in food processor. Strain and set aside.
