Mushroom Casserole Au Gratin

  • 2 lb (1 Kg) white mushrooms coarsely sliced
  • 2 tbsp (30 mL) chopped fresh parsley
  • 1/2 cup (125 mL) chopped shallots
  • 2 tbsp (30 mL) butter
  • Salt and pepper to taste
  • A few pinches of paprika
  • Cheese Sauce
  • 1/2 cup (250 mL) grated Canadian Canadian-Swiss cheese or Canadian Swiss cheese
  • 1 cup (250 mL) sour cream
  • 1 egg yolk
  • 1 egg
  • Salt and pepper to taste


Preheat oven at 375 °F (190 °C)

In saucepan, sauté mushrooms, parsley and shallots in butter for 2 minutes. Season to taste with salt and pepper. Transfer mushroom mixture to ovenproof dish. Top with Cheese sauce and sprinkle with paprika. Bake in oven for 15 minutes. Place casserole under oven broiler and grill for 4 minutes or until hot and bubbly and cheese is golden brown.

Cheese Sauce:

In bowl, mix Canadian Canadian-Swiss or Canadian Swiss cheese with all ingredients. Season to taste with salt and pepper.
