- Key Lime Pie Filling:
- 2 cups (500 ml) 2% Canadian cottage cheese
- 1 lime, zested and juiced
- 2 tbsp (30 ml) honey or maple syrup
- Crumb Filling:
- ¼ cup (60-75 g) graham crackers, crushed
- 1 tbsp (15 ml) melted Canadian butter
- 1-2 tsp (5-10 ml) sugar

In a blender, combine the cottage cheese, lime zest, lime juice, and honey or maple syrup. Blend until the mixture becomes creamy and smooth. Transfer the mixture to a bowl and set it aside.
In a separate bowl, thoroughly mix the crushed graham crackers, melted butter, and sugar until well combined.
Take two serving glasses and add about 2/3 of the crumb filling to the bottom of each glass. Use a spoon to gently press the crumbs down until they form a cohesive crust.
Pour the key lime pie filling on top of the crumb crust in the glasses.
Sprinkle the remaining crumb filling over the top of the key lime pie filling.
Serve immediately and enjoy!
