Nut-Berry Snack Squares

Ingredients
- Base
- 1 cup (250 mL) softened butter
- 1/2 cup (125 mL) sugar
- 1 egg beaten
- 1 cup (250 mL) all-purpose flour
- 3/4 cup (180 mL) whole wheat flour
- Topping
- 3 cans (170 mL) Nestlé® Carnation® thick cream
- 1 1/4 cups (310 mL) brown sugar
- 3 eggs
- 1 1/2 cups (375 mL) chopped pistachio nuts
- 1 1/2 cups (375 mL) dried cranberries
- 1 cup (250 mL) shredded coconut

Preparation
Base:
Preheat oven to 350 °F (180 °C). Cream butter with sugar and beat in egg. Add a little flour and mix until combined. Add remaining flour and blend well. Press into the bottom of an aluminium foil lined 9 x 13-inch (23 x 23 cm) baking pan. Bake for 15 minutes.
Topping:
Beat canned cream with sugar until well combined. Add eggs, one at a time, and beat until smooth. Stir in pistachios, cranberries and coconut. Spread all over base.
Bake for 60 to 65 minutes or until golden brown on top. Cool completely before slicing.
