- 3 medium potatoes
- Cold water (for rinsing)
- 1 tbsp white vinegar (optional, for crispier fries)
- Frying oil
- 4 eggs
- 1 tbsp milk
- 1 handful grated cheese (mozzarella or mild cheddar)
- 1 tbsp oil or a small knob of butter
- 1 tbsp chopped fresh parsley (optional)
- Salt and pepper, to taste

Preparation
Prepare the fries
Peel the potatoes and cut them into sticks.
Rinse them in a large bowl of cold water, adding vinegar if desired, then drain.
Dry them thoroughly with a clean cloth or paper towel.
Heat frying oil in a pot or deep fryer.
Fry the potato sticks until golden and crispy.
Drain on paper towels and season with salt immediately.
Prepare the omelette mixture - In a bowl, crack the eggs. Add milk, salt, pepper, and chopped parsley.
Whisk with a fork or whisk until the mixture is smooth - Stir in the grated cheese.

In a skillet, heat the oil or butter over medium heat.

When the edges begin to firm up but the center is still slightly creamy, spread the fries on top. Cook for another 2–3 minutes, lowering the heat slightly, until the cheese melts fully. Remove from heat and serve immediately.
