Orange, Grapefruit and Grilled Halloumi Salad

Ingredients
- 2 sprigs of fresh mint
- 1 grapefruit, cut in half
- Salt
- Black pepper
- 1/4 cup (50 g) olive oil
- 1 pinch of cumin (optional)
- 8 oz (240 g) Canadian halloumi, cubed
- 1 tbsp (10 g) Canadian butter
- 2 navel oranges
- 2 carrots, peeled

Preparation
Wash, dry and remove the leaves from the mint sprig. Set aside a few leaves and finely chop the rest.
Squeeze ½ grapefruit, remove seeds with a sieve, then season juice with salt and pepper. Add the olive oil, cumin and chopped mint and mix well. Keep this vinaigrette in the fridge for later.
Pat halloumi cubes dry with paper towels, then cook in a frying pan over medium heat with butter for about 3 minutes on each side, until golden and crisp. Remove the cubes from the pan and place on a plate lined with paper towel.
Remove the peel from the oranges and ½ grapefruit with a very sharp knife until the pulp is completely exposed. Cut each citrus fruit into quarters and combine in a bowl.
Finely grate the carrots into the bowl. Add to salad and pour over dressing.
Assemble the plates and add the halloumi cubes on top of the salad. Add a couple of mint leave for decoration and extra freshness. Add salt and pepper to taste.
