Owlsberg Cheese Bites

Ingredients
- 1/2 cup (125 mL) water
- 1/2 cup (125 mL) Milk
- 1 pinch of salt
- 1/3 cup (80 mL) butter
- 1 cup (250 mL) flour
- 4 eggs
- 2/3 cup (160 mL) Canadian Owlsberg* Swiss cheese grated
- 3 tbsp (45 mL) Canadian Parmesan cheese grated
- 1 egg yolk
- 2 tbsp (30 mL) Milk
- 1/4 cup (60 mL) Canadian Owlsberg* cheese grated to garnish

Preparation
Preheat oven to 400 °F (200 °C).
In a thick-bottomed saucepan, mix water, salt, 1/2 cup (125 mL) milk and butter. Bring to a boil. Add all the flour at once and stir briskly until dough stops sticking to the sides of the saucepan.
Remove from heat, allow to cool a little, then blend in whole eggs, one at a time. Add 2/3 cup (160 mL) Canadian Swiss Owlsberg and Parmesan cheeses, blend in to make smooth paste.
Using a pastry bag with nozzle (or two spoons) place small amounts of dough on a cookie sheet (dough expands when baked so make sure to space well apart).
Brush dough with egg yolk and 2 tbsp (30 mL) milk, sprinkle with 1/4 cup (60 mL) Canadian Swiss Owlsberg cheese and bake in oven 10 to 15 minutes. Serve as appetizers.
Tips
*Any Canadian Swiss-type cheese is good in this recipe.
