Panini with Parmesan and Balsamic Vinegar

Ingredients
- 4 small panini buns*
- 3 tbsp (45 mL) olive oil
- 1 tbsp (15 mL) dried Italian herbs
- 1/2 red bell pepper julienned
- 1/2 green bell pepper julienned
- 8 thin slices of roast pork**
- 8 shavings of Canadian Parmesan cheese***
- 1 tbsp (15 mL) balsamic vinegar
- Salt and pepper to taste
- 1 tbsp (15 mL) chopped chives

Preparation
Cut panini in two lengthwise, brush with olive oil and sprinkle with herbs. Brush peppers with oil and grill peppers in oven for 5 to 6 minutes.
Place roast pork slices on panini, then add peppers and Canadian Parmesan* cheese. Sprinkle with balsamic vinegar, season with salt and pepper, place on a baking sheet and cook in 275 °F (140 °C) oven for 5 to 7 minutes. Sprinkle with chopped chives.

*You may substitute Italian style hard rolls.

***This dish can also be prepared with a few slices of Canadian Mozzarella cheese, in which case panini should be grilled for 1 to 2 minutes.
