Peachy Cream Chicken

Ingredients
- 1 cup (250 mL) sour cream
- 1/4 cup (60 mL) mayonnaise
- 1 tsp (5 mL) curry powder
- 3 tbsp (45 mL) mango chutney or other fruit chutney
- 1 lb (450 g) cooked chicken diced
- 1 can (19 oz/540 mL) peaches
- 1 tbsp (15 mL) roasted slivered almonds
- Fresh parsley

Preparation
In bowl, mix together sour cream, mayonnaise, curry and chutney. Add extra curry powder to taste. Stir in chicken.
Drain peaches and reserve 2 tbsp (30 mL) of juice. Chop half the peaches and add to chicken mixture. Stir in reserved juice. Serve on individual plates. Garnish each plate with roasted almonds, remaining peaches and fresh parsley.
