- 2 tbsp (30 mL) unsweetened grated coconut
- 1/2 cup (125 mL) Canadian Mascarpone
- 1/2 cup (125 mL) thick plain yogurt (Greek-style)
- 2 tbsp (30 mL) sugar
- 1/2 cup (125 mL) crushed pineapple

Preheat oven to 350 °F (180 °C).
Spread coconut out in an oven-safe dish and bake for 5 minutes. Remove from oven and let cool.
In a blender, mix the Mascarpone, yogurt and sugar until smooth. Pour into a bowl and add pineapple and coconut. Stir and serve with fresh fruit, muffins, waffles or pancakes.
