  • 1 onion thinly sliced
  • 1 cup (250 mL) sliced mushrooms
  • 1/4 cup (60 mL) chopped green bell pepper
  • 2 tbsp (30 mL) butter
  • 1 cup (250 mL) Milk
  • 1/2 cup (125 mL) cream 35 %
  • 3 eggs lightly beaten
  • 1/2 tsp (2 mL) Italian herb seasoning or dried oregano
  • 1 tsp (5 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 2 tbsp (30 mL) tomato paste or tomato sauce
  • 1 cup (250 mL) grated Canadian mozzarella cheese
  • 1/2 cup (125 mL) thinly sliced pepperoni

Preparation

Sauté onion, mushrooms and green pepper in butter; set aside.

Combine milk, cream, eggs and seasonings; add sautéed vegetables.

Spread tomato paste over bottom of pastry shell; sprinkle with Canadian Mozzarella, and then cover with milk-vegetable mixture.

Arrange pepperoni slices on top. Bake at 425 °F (220 °C) for 20 to 30 min, or until set. If crust begins to brown too quickly, cover with a foil collar.
