Pork, Cheese and Sun-Dried Tomato Sausages

Ingredients
- 1 lb (450 g) lean ground pork
- 1/2 cup (125 mL) Canadian Cheddar cheese grated
- 3 slices sun-dried tomato finely minced
- 1 egg
- 1 clove garlic finely minced
- 2 tbsp (25 mL) chopped fresh parsley
- 1/4 tsp (1 mL) cinnamon
- 1/4 tsp (1 mL) nutmeg
- Salt
- Pepper to taste
- 3 tbsp (45 mL) tomato sauce
- (150 cm) 5 feet Toulouse sausage casing* (1-1 1/4 in/30-32 mm size)

Preparation
Mix together all ingredients, except casing and tomato sauce, until a smooth consistency is obtained. Add tomato sauce and mix thoroughly.
Slip casing onto end of a funnel tube and knot the end. Place meat mixture in funnel. Fill casing and knot or tie at regular intervals to make sausages that are 6 in (15 cm) long.
Tips
This recipe lets you make your own sausages and cook them whatever way you like.
*Order Toulouse sausage casing from your butcher about a week ahead of planned cooking time. Befor using, soak it in cold water for 30 minutes.
