Pork Tenderloin Medallions with Garlic and Lime Butter

Ingredients
- 2 pork tenderloins
- Ground pepper to taste
- A few pinches of paprika
- Garlic and Lime Butter
- 4 oz (125 g) butter softened
- 1 tbsp (15 mL) lime juice
- 2 garlic cloves crushed
- 2 tbsp (30 mL) finely chopped fresh parsley

Preparation
Season tenderloins with pepper and paprika. Cook on grill over medium-high heat for 10 minutes. Remove from grill and cut each tenderloin into six slices.
Serve three slices per person and top each one with small Garlic and Lime Butter ring. Serve with new potatoes and steamed broccoli.
Garlic and Lime Butter:
In bowl, blend together butter and other ingredients with fork. Mix until well blended and place it on sheet of waxed paper. Spread butter lengthwise and roll paper into 1-inch (2.5 cm) cylinder (roughly the size of a quarter). Refrigerate.
