Prosciutto and Mint Pork Tenderloin Wraps

Ingredients

  • 2 pork tenderloins trimmed of fat
  • Salt and freshly ground pepper to taste
  • Choice of hot mustard
  • Fresh mint leaves
  • 8 to 12 large slices of prosciutto
  • Creamy Shallot Sauce
  • 1 cup (250 mL) plain plain yogurt
  • 3 green onions finely chopped
  • 1 tsp (15 mL) juice of 1 lemon
  • 1 tbsp (15 mL) Dijon mustard
  • 1/2 tsp (2 mL) seasoned salt

Preparation

Cut pork tenderloins in two. Season to taste with salt and pepper and rub in lightly with hands. Brush with hot mustard and set aside.

On work surface, overlap 2 prosciutto slices, cover with mint leaves and add half pork tenderloin on top. Wrap meat tightly with prosciutto. Repeat process 3 times with remaining ingredients.

Cook pork wraps on barbecue grill over medium forheat about 15 minutes, turning a few times. Slice and serve over bed of wild rice with Creamy Shallot Sauce. Serve with steamed broccoli.

Creamy Shallot Sauce:

In bowl, mix all ingredients. Refrigerate.
