Pull-Apart Chicken Fajita Sliders

Here’s an easy dinner recipe that will please the whole family, as well as your circle of friends on a casual night-in. Imagine flavourful chicken fajita filling, seasoned to perfection and served inside a fluffy brioche bun with melted Canadian mozzarella cheese… These bite-sized pull-apart sliders accomplish all this, using simple ingredients you might have already in your fridge and pantry right now, and will be on the dinner table in under 45 minutes. Who doesn’t love a quick dinner idea?

Pull-Apart Chicken Fajita Sliders

Ingredients

  • 15 ml (1 tbsp) Canadian butter
  • 15 ml (1 tbsp) cooking oil
  • 400 g (14 oz) chicken thighs, cut into strips
  • 45 ml (3 tbsp) fajita seasoning spice mix
  • 5 ml (1 tsp) paprika powder (optional)
  • ¼ yellow pepper, julienned
  • ¼ red pepper, julienned
  • ¼ orange pepper, julienned
  • 12 mini savoury butter rolls
  • 5 slices of 100% Canadian mozzarella cheese
  • 5 slices of 100% Canadian Cheddar cheese, or Canadian Havarti Jalapeño cheese
  • Melted Canadian butter
  • Handful of chopped parsley

Preparation

Heat oil and butter in a pan and add in your chicken thighs. Then add in fajita seasoning spice mix and paprika powder. Cook on medium heat for 10 mins or until the chicken is cooked through.

Add in the peppers. Stir well for 5 mins. Set aside.

Using a bread knife, cut the savoury butter rolls in half, separating the top and bottom.

Add Canadian mozzarella cheese slices and chicken filling on the bottom.

Top with the slices of cheddar or havarti cheese.

Add the top part of the bread over the filling and cheese.

Brush the top with some melted butter (optional).

Add some chopped parsley.

Cover the buns with foil and bake for 15 mins or until the cheese has melted. Alternatively if you don’t want to bake you can heat them in the microwave for a minute or two.

Tips

Leftovers from this easy dinner recipe might taste even better as the next day’s lunch! Simply reheat the the sliders in the oven, or keep any extra chicken preparation in the fridge and heat up the buns as needed.
