Quick Mexican Lasagna

Ingredients

  • 12 to 16 lasagna pasta
  • 1 1/3 lbs (600 g) lean ground beef
  • 1 tbsp (15 mL) olive oil
  • 1 pkg (1 oz/35 g) taco seasonings
  • 2/3 cup (160 mL) water
  • 1 1/2 cup (375 mL) mild salsa
  • 1 cup (250 mL) taco sauce
  • 2 cups (500 mL) grated Medium Canadian Cheddar cheese

Preparation

Preheat oven to 375 °F (190 °C).

Cook lasagna pasta according to cooking instructions on package, until al dente. Drain and rinse under cold running water. Drain again and set aside.

In skillet, cook ground beef in oil over medium-high heat until no longer pink. Drain off fat.

Stir in taco seasonings, salsa and taco sauce. Simmer for 5 minutes while stirring. Spread one-third of meat mixture into lasagna dish or baking dish. Cover with pasta and repeat process twice. Top with Medium Canadian Cheddar cheese and bake for 20 to 30 minutes.

Remove from oven and serve immediately. Serve with cucumber salad.
