Raspberry Chicken

Ingredients
- 1 lb (450 g) skinless, boneless chicken breasts cut in strips
- 3 tbsp (45 mL) butter
- 4 green onions chopped
- 2/3 cup (160 mL) raspberry vinegar
- 1/4 cup (60 mL) apple juice
- 1 tbsp (15 mL) honey
- Salt and pepper to taste
- Fresh raspberries

Preparation
In saucepan, sauté chicken strips in half the butter for 8 minutes over medium heat. Remove chicken from skillet and set aside.
In same skillet, sauté green onions for 2 minutes. Stir in vinegar, apple juice and honey; cook until sauce thickens. Season with pepper and salt to taste.
Add chicken strips and heat through for 2 minutes over medium heat. Remove skillet from heat and stir in remaining butter. Serve over bed of rice or pasta. Garnish with raspberries.
