Ingredients

  • 4 small red mullet washed and cleaned
  • 1 tbsp (15 mL) dried herbs
  • olive oil
  • Meaux Mustard Butter
  • 1/2 cup (125 mL) butter
  • 2 French shallots chopped
  • 2 tbsp (30 mL) Meaux mustard
  • 1 tsp (5 mL) fresh tarragon
  • 1 tbsp (15 mL) fresh basil
  • Juice of 1/2 lemon
  • Salt and freshly ground pepper to taste

Preparation

Brush red mullet with olive oil and sprinkle with dried herbs.

Cook red mullet on lightly oiled grill over medium-high heat for 8 minutes on each side. Turn fish only once and avoid handling too much. Serve fish with lemon wedges and with Meaux Mustard Butter.

Meaux Mustard Butter:

In saucepan, melt butter with shallots over medium heat. Stir in remaining ingredients and season to taste with salt and pepper. Transfer in small bowls. Serve mustard butter with fish and seafood.

Tips

A double-grill with handle can also be used to cook fish.
