This is the Rigatoni with Scallops recipe.

- 12 1/2 oz (375 g) rigatoni
- 2 tbsp (30 mL) butter
- 1 small onion finely chopped
- 1/2 cup (125 mL) dry white wine
- 1/2 cup (125 mL) water
- 1 cup (250 mL) 35 % cream
- 1 tsp (5 mL) Italian seasoning
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 1 tbsp (15 mL) fresh chives chopped

Cook rigatoni until tender and drain well.
Meanwhile in large skillet melt butter. Sauté onion and cook until it is softened 3 to 4 min.
Add wine and water (or 1 cup/ 250 mL water) and bring to a boil. Add scallops and cook for 90 sec to 2 min. Remove and keep warm.
Reduce liquid in pan until it is syrupy. Add cream, herbs, salt and pepper. Return to boil and simmer for 3 to 4 min or until slightly thickened.
Toss rigatoni with sauce and scallops. Season to taste. Sprinkle with chives.
