Scalloped Potatoes au Gratin

Ingredients

  • 2 tbsp (30 mL) butter
  • 2 cups (500 mL) Milk
  • 1 cup (125 mL) Canadian Neufchâtel cheese or Canadian soft cheese aux fines herbes
  • 1 cup (250 mL) grated Canadian white Cheddar
  • 8 oz (250 g) sliced mushrooms
  • 4 green onions chopped
  • Dash of nutmeg
  • fresh thyme
  • Salt and pepper to taste
  • 6 Quebec new potatoes minced
  • 1 cup (250 mL) bread crumbs

Preparation

Wash potatoes and finely slice.

Melt butter and sauté mushrooms and green onions 2 or 3 minutes on low/medium heat. Set a side.

Slowly heat milk and Canadian Neufchâtel cheese or Canadian soft cheese aux fines herbes for a few minutes, stirring constantly. Add nutmeg, thyme, salt and pepper. Cook until thick and smooth.

Arrange potatoes in a gratin platter, and pour cheese mixture on top. Sprinkle with Canadian Cheddar cheese and bread crumbs and bake at 180 °C (350 °F) for 15 to 20 minutes. Monsieur Michel VerdonLachine, Québec
