Preparation
Prepare fruit chutney before making sandwich.
Butter one side of each bread slice and place buttered side down on a work surface.Layer the Brie followed by the Cheddar on one bread slice. Top with remaining slice of bread (buttered side out).
Heat a grill pan over medium heat. Cook sandwich, turning once, for 5 minutes on each side or until golden and crispy, adjusting heat as necessary to prevent burning. Serve immediately with the fruit chutney.
Fruit chutney:
In a medium saucepan, combine 1 cup (250 ml) fresh or frozen blueberries, 1 cup (250 ml) fresh or frozen cranberries, ½ cup (125 ml) drained can of diced tomatoes, ½ cup (125 ml) apple juice, ¼ cup (60 ml) red wine vinegar, 2 tbsp (30 ml) liquid honey and ½ tsp (2 ml) kosher salt. Bring to a boil over high heat. Reduce heat and simmer, stirring occasionally, for about 20 minutes or until thickened. Cover and refrigerate to cool. Taste and adjust sweetness, if necessary.
