Simple Black Forest Parfait

I’ve got a birthday coming up (whispers a muffled number), so I had black forest cake on the brain this week. I love to find ways to make black forest treats that anyone can make quickly and easily.

Ingredients

  • For the base
  • 24 chocolate wafer cookies
  • 4 tbsp maraschino cherry syrup
  • For the chocolate mousse
  • 6 oz semi-sweet chocolate
  • 2 cups 35% cream
  • 1 tsp vanilla
  • For the cherry layer
  • 1 can of cherry pie filling
  • For the topping and garnish
  • 1/2 cup 35% cream
  • Chocolate shavings (any type of chocolate you like)
  • 4 Maraschino cherries

Preparation

For the base:

Break up wafer cookies and layer them evenly in the bottom of each parfait or trifle bowl. Drizzle the maraschino cherry syrup over top of the cookies.For the chocolate mousse:Melt the chocolate in a double boiler over medium heat. Allow to cool. In a stand mixer whip the cream until fluffy. Add the vanilla and cooled chocolate. Beat until combined. Pour over the cookie portion. Place in fridge for about an hour to set up.For the cherry layer:Remove dishes from fridge. Pour cherry pie filling over top of the mousse portion.For the topping and garnish:Whip the cream in a stand mixer until it’s fluffy. Top each parfait with a dollop of cream. Shave or grate some chocolate over top of each dish. Top with a cherry. Place in fridge for at least 4 hours to allow cookies to soften on the bottom layer.Serve with a big old black forest smile!
