This is the Sir Laurier d'Arthabaska Au Gratin Onion Soup recipe.
- Prep: 15 min
- Cooking: 15 min - 20 min
- 2 oz (60 g) butter
- 2 large onions sliced
- 2 tsp (10 mL) flour
- 4 cups (1 L) vegetable broth or chicken broth
- 1/2 cup (125 mL) dry white wine
- 4 slices country bread
- 5 oz (150 g) Canadian Sir Laurier d'Arthabaska cheese
- Salt and freshly ground pepper to taste
In a frying pan, sauté onions in butter about 10 minutes, stirring continuously. Incorporate flour and let it brown, still stirring continuously. Add broth and white wine. Bring to a boil while stirring. Reduce heat, season, cover and simmer 7 to 8 minutes.
Meanwhile, lightly toast bread slices under broiler, then top with Canadian Sir Laurier d'Arthabaska cheese. Return slices to broiler until cheese is brown.
Using a slotted spoon, divide onions between four bowls. Pour over broth, place Canadian Sir Laurier d'Arthabaska cheese toasts on top and serve immediately.
