Our dietitians' favourite

Seasoned and sautéed lamb is wrapped in a pita and topped with onions, tomatoes and homemade Tzatziki to make this familiar Greek fast food fare. Wrapped in foil and served with Greek salad, it's the restaurant experience at home.

Ingredients

  • 1 lb (450 g) lamb cut in strips
  • 1 tbsp (15 mL) butter
  • Salt and pepper to taste
  • Dried oregano to taste
  • Dried basil to taste
  • Dried marjoram to taste
  • 1 large onion sliced
  • 2 tomatoes sliced
  • 4 pita bread
  • Chopped lettuce for garnish
  • Tzatziki Sauce
  • 2 cucumbers peeled and seeded
  • 1/2 cup (125 mL) plain yogurt
  • 2/3 cup (160 mL) sour cream
  • 4 garlic cloves finely chopped
  • 2 tbsp (30 mL) chopped fresh parsley
  • Salt and pepper to taste

Preparation

In skillet, sauté lamb strips in butter while stirring. Season with salt, pepper, oregano, basil and marjoram. In centre of each pita bread, arrange layers of lamb mixture, onion and tomato slices and lettuce. Top with Tzatziki Sauce and roll up souvlakis with foil wrap, as in restaurants. Season to taste with favourite spices. Serve immediately with a Greek salad.

Tzatziki Sauce:

Purée all ingredients in food processor until smooth. Season to taste with salt and pepper. Pour in bowl and keep in refrigerator.
