Spice Nut Health Muffins

This recipe is taken from the 1996 Milk Calendar. You don’t actually have to be a health nut to enjoy all the good-for-you stuff squeezed into these muffins.

Ingredients

  • 1/2 cup (125 mL) honey
  • 1/2 cup (125 mL) butter softened
  • 2 eggs
  • 1 lemon juice
  • 1 tsp (5 mL) vanilla extract
  • 1/2 cup (125 mL) raisins
  • 1 cup (250 mL) wheat bran
  • 1 cup (250 mL) Milk
  • 1 cup (250 mL) all-purpose flour
  • 1 cup (250 mL) whole-wheat flour
  • 1 tbsp (15 mL) baking powder
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2 mL) ground nutmeg
  • 1/2 tsp (2 mL) ground ginger
  • 1/2 tsp (2 mL) salt
  • 1/2 cup (125 mL) nuts or sunflower seeds chopped
  • 1/4 cup (60 mL) quick cooking rolled oats

Preparation

Preheat oven to 375 °F (190 °C). Lightly butter or spray 12-cup non-stick muffin pan.

Cream together honey, butter, eggs, lemon juice and vanilla extract. Stir in raisins, bran and milk until smooth.

In second bowl add flours, baking powder, spices and salt. Stir dry mixture into creamed mixture until smooth. Stir in nuts. Spoon batter into muffin tins, filling each nearly to the top. Sprinkle with oats.

Bake for 20 to 25 min or until lightly browned.
