Stuffed Cherry Tomatoes Tikka

Ingredients

  • 1 lb (500 g) boneless skinless chicken breast
  • 20 cherry tomatoes (largest size)
  • 4 metal or bamboo skewers
  • Tikka Marinade
  • 2 garlic cloves crushed
  • 1 tsp (5 mL) peeled and chopped fresh ginger
  • 1 tsp (5 mL) ground coriander
  • 1 tsp (5 mL) ground cumin
  • 1 tsp (5 mL) ground turmeric
  • 1 tsp (5 mL) paprika
  • 2 tsp (10 mL) chili powder
  • Juice of 1 lime
  • 1/2 cup (125 mL) sour cream
  • Sea salt and freshly ground pepper to taste

Preparation

Chop chicken breast in chunks just big enough to fit each hollowed out tomato. Place chicken in rectangular dish and pour marinade over chicken. Marinate in refrigerator for 1 to 2 hour, mixing occasionally.

Meanwhile, slice off top of tomatoes and scoop out seeds and pulp with teaspoon or melon ball scoop.

Place 1 chicken chunk in each hollowed out tomato. Thread 5 stuffed tomatoes on each skewer. Cook on oiled barbecue grill over medium heat with lid closed for 5 to 7 minutes on each side. Remove from heat. Remove stuffed tomatoes from skewers and arrange on a serving platter.

Tikka Marinade:

In bowl, mix all marinade ingredients. Season to taste with salt and pepper. Refrigerate.
