This is the Sweet Potato Cassolette recipe.

- 1/2 oz (15 g) pancetta or bacon thinly sliced
- 1/2 cup (125 mL) sweet potatoes peeled and diced
- 3 green onions chopped
- 1 oz (30 g) Canadian Sharp Cheddar shredded
- 1 egg

Preheat the oven to 425 °F (220 °C)
In a skillet over medium heat, sauté pancetta along with sweet potatoes for 4–5 minutes.
Transfer into one-serving casserole dish, add remaining ingredients and top with egg. Bake in the oven for 15–20 minutes, depending on the desired doneness of the egg.
Before adding the egg, beat it with a bit of water to prevent it from overcooking.
