Ingredients

  • 1 large tortilla
  • 4 large eggs
  • 2 tbsp (30 ml) Canadian cottage cheese, strained
  • Salt and pepper to taste
  • 1/3 cup (50 g) cherry tomatoes, cut in half
  • A handful baby spinach, chopped
  • 1/2 cup (50 g) Canadian mozzarella, grated
  • 1/2 cup (50 g) Canadian cheddar cheese, grated
  • Chives, for garnish (optional)

Preparation

Preheat oven to 350°F (175°C).

Place a tortilla on the bottom of a skillet or baking pan.

Crack eggs directly onto tortilla, then add drained cottage cheese.

Season with salt and pepper.

Mix with a fork. Add tomatoes and spinach, then top with mozzarella and cheddar.

Bake in the oven for 25-30 minutes, or until eggs are fully cooked.

Optional: Garnish with chives and serve with your favourite hot sauce.
