Preparation

Cut two slices of sourdough bread from the loaf.

In a saucepan, combine the blackberries, raspberries, lemon juice, and lemon zest. Cook until the berries burst and the mixture reduces. Set aside.

Preheat a pan over medium-low heat. Begin by buttering two slices of sourdough bread.

Take one slice of the bread and spread caramelized onion jam on the side that is not buttered. Next, layer brie cheese, gruyere cheese, and sprinkle dried thyme leaves on top of the onion jam. Place the second slice of bread on the sandwich, ensuring that the buttered side is facing up.

Add the sandwich to the pan and toast until both sides are golden brown and the cheese is melted.

Remove the sandwich from the pan, open it, and add the berry compote. Close the sandwich.

Drizzle the sandwich with truffle honey and cut it in half.

Serve immediately and enjoy!
