Turkey Breast Parmigiana

Ingredients

  • 1/2 cup (125 mL) grated Canadian Parmesan cheese
  • 1/2 cup (125 mL) fine dry bread crumbs
  • 2 lb (1 Kg) boneless skinless turkey breast cut in 8 pieces
  • 1/3 cup (80 mL) all-purpose flour
  • 2 eggs lightly beaten
  • Butter
  • 3 cups (750 mL) spaghetti sauce or pizza sauce
  • 2 pkgs (6 1/2 oz / 200 g each) Canadian Mozzarella* cheese slices

Preparation

In shallow dish, combine Canadian Parmesan cheese and bread crumbs. Pound turkey lightly to flatten. Dip pieces into flour, then eggs and finally cheese mixture. Shake lightly to remove excess. Let pieces stand on wire rack 10 minutes.

Preheat oven to 350 °F (180 °C).

In large frypan, melt a little butter. Sauté turkey until golden on both sides, adding more butter to pan as needed.

Spread half the spaghetti sauce on the bottom of 12-cup (3 L) shallow rectangular baking dish. Alternately layer turkey and Canadian Mozzarella cheese. Spoon remaining sauce around edges of dish.

Bake, uncovered, 25 minutes or until heated through.

Tips

* Or you can use thinly sliced Canadian Provolone cheese.
