Vanilla-Cashew Bars

Ingredients

  • 1/2 cup (375 mL) sugar
  • 1/3 cup (80 mL) soft butter
  • 1/3 cup (80 mL) sour cream
  • 2 eggs
  • 1 tbsp (15 mL) vanilla extract
  • 1/2 cup (375 mL) all-purpose flour
  • 1/2 tsp (7 mL) baking powder
  • 2/3 cup (160 mL) coarsely chopped salted cashew
  • Amarretto Icing
  • 2 cups (500 mL) icing sugar
  • 3 tbsp (45 mL) 15 % or 18 % cream
  • 3 tbsp (45 mL) Amaretto liqueur

Preparation

Preheat oven to 350 °F (180 °C).

In large bowl, beat sugar, butter and sour cream with electric mixer, until smooth. Stir in eggs, one at a time, and vanilla extract. Gradually beat in flour and baking powder with electric mixer on low speed. Add cashews and mix well.

Pour into buttered 13- x 9-inch (33 x 23 cm) cake pan. Bake for about 25 minutes or until toothpick inserted in centre comes out clean.

Remove from oven and set aside. Spread cake with Amaretto Icing. Cut into squares. Serve warm or cold.

Amaretto Icing:

In bowl, combine icing sugar, cream and Amaretto, mixing with fork. Add a little more liquid if needed, until preferred consistency. Mix well until smooth and creamy. Reserve.
