Waldorf Salad with Canadian Swiss Cheese

This is the Waldorf Salad with Canadian Swiss Cheese recipe.

Ingredients

  • 3 celery stalks sliced thinly
  • 1 small onion sliced thinly
  • 1 carrot coarsely grated
  • 1 lb (450 g) white cabbage
  • 1 green apple
  • Caraway seeds
  • 2 oz (60 g) chopped nuts
  • 7 oz (210 g) Canadian Swiss cheese in small cubes
  • Dressing
  • 3 tbsp (45 mL) olive oil
  • 2 tbsp (30 mL) sunflower oil
  • 3 tbsp (45 mL) cider vinegar or white wine
  • 1 tbsp (15 mL) Dijon mustard
  • 1 big pinch of sugar
  • 1 big pinch of dried tarragon
  • Salt
  • Freshly ground black pepper

Preparation

Cut cabbage in four, remove heart and shred each quarter finely. Grate apple coarsely. In a salad bowl, mix cabbage, apple, celery, onion, carrot, caraway seeds and chopped nuts.

Mix together all dressing ingredients. Combine dressing with salad and chill at least 1 hour (preferably overnight) to let dressing penetrate vegetables. Just before serving, mix in Canadian Swiss cheese cubes.
