Waldorf Salad with Canadian Swiss Cheese

Ingredients
- 3 celery stalks sliced thinly
- 1 small onion sliced thinly
- 1 carrot coarsely grated
- 1 lb (450 g) white cabbage
- 1 green apple
- Caraway seeds
- 2 oz (60 g) chopped nuts
- 7 oz (210 g) Canadian Swiss cheese in small cubes
- Dressing
- 3 tbsp (45 mL) olive oil
- 2 tbsp (30 mL) sunflower oil
- 3 tbsp (45 mL) cider vinegar or white wine
- 1 tbsp (15 mL) Dijon mustard
- 1 big pinch of sugar
- 1 big pinch of dried tarragon
- Salt
- Freshly ground black pepper

Preparation
Cut cabbage in four, remove heart and shred each quarter finely. Grate apple coarsely. In a salad bowl, mix cabbage, apple, celery, onion, carrot, caraway seeds and chopped nuts.
Mix together all dressing ingredients. Combine dressing with salad and chill at least 1 hour (preferably overnight) to let dressing penetrate vegetables. Just before serving, mix in Canadian Swiss cheese cubes.
