Warm Apple and Fig Tart

Ingredients
- 2 Spartan or Cortland apples
- 4 fresh figs
- 1/4 cup (60 mL) port or cassis (blackcurrant) liquor
- 4 4-inch (10 cm) pastry shells
- 4 tbsp (60 mL) apple sauce
- 2 tbsp (30 mL) butter
- 2 tbsp (30 mL) orange marmalade (optional)
- 4 oz (120 g) Canadian Borgonzola or Canadian Bleubry cheese

Preparation
In a saucepan, reduce the port by half.
Spread the apple sauce on the bottom of each pastry shell.
Peel and core the apples. Slice the apples and figs and arrange them, alternating, over the apple sauce.
With a pastry brush, dab the apple and fig filling with melted butter and bake in the oven at 350 °F (180 °C) for 10 minutes.
Heat the orange marmalade slightly and spread carefully over the cooked tarts. Slice the figs into fan shapes.
Place each tart on a dish, along with a slice of Canadian Borgonzola cheese. Pour over a little of the port mixture and serve.
