Warm Brie Salad

Ingredients

  • 1 bag (11 oz / 340 g) mixed young lettuces
  • 8 oz (250 g) Canadian Brie* cheese wedge (1 large or 2 small)
  • 2 ripe pears with peel cored and thinly sliced
  • Raspberry Dressing
  • 3 tbsp (45 mL) raspberry vinegar or raspberry wine vinegar
  • 1/3 cup (80 mL) olive oil
  • 1 tbsp (15 mL) sugar
  • 1/4 cup (60 mL) frozen raspberries thawed and mashed
  • A few raspberries to garnish

Preparation

Whisk together all dressing ingredients, except for whole raspberries. Set aside.

Divide salad among 4 plates and set aside.

Wrap Canadian Brie in aluminum foil and heat 5 minutes in oven at 400 °F (200 °C), or place in a loosely covered microwave-safe dish and heat in microwave at Medium for about 45 seconds, until soft. Cut cheese in slices and gently place on salad using a small spatula.

Decorate plates with thin pear slices, arranging them to look like flower petals.

Pour some raspberry dressing over salads and garnish with whole raspberries. Serve warm.

Tips

* You can also try another similar soft cheese like Canadian Camembert.
