Welsh Vegetarian Sausages

Ingredients
- 3/4 cup (180 mL) grated Canadian Migneron*, cheese
- 2 green onions minced
- 2 small leeks minced
- 1 1/2 cups (375 mL) Italian bread crumbs or regular bread crumbs
- 1 tsp (5 mL) dry mustard or 2 tsp (10 mL) Dijon mustard
- Fresh or dried thyme to taste
- Fresh or dried rosemary to taste
- A pinch of grated nutmeg
- 2 whole eggs
- 2 egg whites
- Flour (to sprinkle)
- Vegetable oil for deep frying
- Salt and freshly ground pepper to taste

Preparation
Mix cheese, 2/3 of breadcrumbs, onions, leeks, mustard and herbs. Season with nutmeg, salt and pepper, then mix in eggs.
Knead mixture thoroughly until it holds its shape. Refrigerate until firm.
Shape into 12 sausages.
Beat egg whites lightly.
Sprinkle sausages with flour, then dip in egg white. Roll them in remaining bread crumbs. Deep fry in oil until golden. Place on absorbent paper to drain excess fat.
Serve hot.
