West Coast Crispies

Ingredients

  • 2 baguette breads cut in 20 slices each
  • 1 green bell pepper chopped
  • 2 tomatoes chopped
  • 3 garlic cloves finely chopped
  • 1/4 cup (60 mL) chopped pitted black olives
  • 1 jalapeno pepper finely chopped
  • 4 anchovies fillets finely chopped
  • 2 tbsp (30 mL) chopped fresh basil
  • 1/2 tsp (2 mL) dried rosemary
  • 1/4 cup (60 mL) olive oil
  • Juice of 1 lemon
  • Pepper to taste
  • 40 small slices Canadian Mozzarella cheese

Preparation

Preheat oven to 500 °F (260 °C).

Place bread slices on baking sheet and toast in oven for about 45 seconds on each side. Remove from oven and set aside. Reduce oven heat to 400 °F (200 °C).

In bowl, combine all ingredients, except cheese. Mix well and season to taste with pepper. Drain mixture, scoop on toasts and top each one with a slice of Canadian Mozzarella cheese. Bake for 7 to 9 minutes. Remove from oven and let stand for 5 minutes.
