Ingredients

  • 2 lb (1 Kg) boneless lamb loin chops
  • Salt and pepper to taste
  • All-purpose flour
  • 1 tbsp (15 mL) olive oil
  • 2 tbsp (30 mL) butter
  • 1/2 cup (125 mL) dry white wine
  • 1 tbsp (15 mL) Dijon mustard
  • 1 cup (250 mL) 35 % cream

Preparation

Season lamb loin chops with salt and pepper. Dredge lightly with flour. In skillet, cook lamb in oil and butter for about 2 to 3 minutes on each side, until preferred doneness. Remove from skillet and keep warm.

Pour wine in skillet while scraping bottom with a spatula. Simmer for 3 minutes while stirring. Stir in mustard and cream. Reduce heat to low and simmer until sauce thickens. Correct seasoning and remove from heat. Serve lamb over sauce with fresh pasta and Brussels sprouts.
