Ingredients

  • 2 cups (500 mL) cherry tomatoes halved
  • 1 cup (250 mL) orange bell pepper diced
  • 1 cup (250 mL) yellow bell pepper diced
  • 3 1/2 oz (100 g) Canadian Mozzarella diced
  • 3 1/2 oz (100 g) Canadian Feta diced
  • 2 cups (500 mL) canned chickpeas drained
  • 2 shallots finely chopped
  • 1/4 cup (60 mL) chopped fresh basil
  • 1/4 cup (60 mL) lemon juice freshly squeezed
  • 2 tbsp (30 mL) olive oil
  • Salt and pepper to taste

Preparation

Place cherry tomatoes, peppers, cheeses, chickpeas, shallots and basil in a salad bowl. Whisk together lemon juice and olive oil. Mix gently into salad. Season to taste.
