Alpine Potato, Ham and Canadian Swiss Gratin (Cooking Club Size)

Ingredients
- 4 lb (2 Kgs) all-purpose potatoes or Yukon Gold potatoes thinly sliced (about 12 cups/3 L)
- 2 large onions finely chopped
- 12 oz (360 g) cooked thinly sliced ham
- 2 1/2 cups (625 mL) chicken broth
- 1/4 cup (60 mL) all-purpose flour
- 4 cups (1 L) shredded Canadian Swiss* cheese

Preparation
Preheat oven to 375 °F (190 °C).
Layer one-quarter of the potato slices and one-quarter of the onion in each of two 13 x 9-inch (33 x 23 cm) baking dishes. Sprinkle with salt and pepper.
Divide and arrange ham slices evenly over potatoes. Top each with a second layer of potatoes and onions. Sprinkle with salt and pepper.
In medium saucepan, whisk chicken broth and flour together until smooth. Cook and stir over medium-high heat until mixture boils and thickens. Pour over potatoes in baking dishes. Divide and sprinkle Canadian Swiss cheese evenly over both dishes.
Bake uncovered for 60 to 70 minutes or until potatoes are tender and cheese is browned. Let stand 5 minutes before cutting and serving.
Tips
Cooking Club Tip:Divide into portions, label with recipe name, date and cooking instructions. When ready to serve, heat in conventional or microwave oven until heated through.
A mandolin is ideal and quick for making thin slices of potato.
* For a change of taste, use your favourite blend of shredded Canadian cheeses.
