Grilled Salmon with Avocado Herb Sauce

Cream and a ripe avocado make these salmon steaks unforgettable.

Ingredients

  • 6 6 oz (175 g) salmon steaks
  • 2 tbsp (30 mL) melted butter
  • Sauce
  • 1 cup (250 mL) 35 % cream
  • 1 ripe avocado peeled and pitted
  • 1/4 cup (60 mL) chopped red onion
  • 2 tbsp (30 mL) fresh mint
  • 2 tbsp (30 mL) parsley
  • 2 tbsp (30 mL) lemon juice
  • 1 tbsp (15 mL) fresh coriander
  • 1/2 tsp (2 mL) ground cumin
  • 1/2 tsp (2 mL) Tabasco sauce
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) pepper
  • 1 garlic clove

Preparation

Sauce:

Measure all ingredients into a blender or food processor. Blend until smooth. Season to taste. Refrigerate for at least 2 hrs for flavours to blend.

Reserve 1-1/2 cups (375 mL) and use remaining sauce to brush on salmon during cooking.

Brush salmon steaks with butter. Pre-heat grill to medium. Place salmon steaks on grill. Cook 4 to 5 min per side, brushing cooked sides with sauce. Serve salmon steaks immediately with reserved sauce.
