Canapés with Tuna & Swiss Cheese

Ingredients
- 1/2 onion
- 1/4 cup (60 mL) capers
- 3 small sour gherkins
- 1 egg yolk
- 10 oz (300 g) canned tuna in oil drained
- 1 tbsp (15 mL) chopped fresh ginger
- 1/2 cup (125 mL) whipped 35 % cream
- 3 egg whites
- 1 baguette bread sliced into rounds
- 4 oz (125 g) Canadian Swiss cheese in thin slices
- Garnish
- 1/3 cup (80 mL) whipped 35 % cream
- 1 tsp (5 mL) Dijon mustard
- A few capers

Preparation
In a food processor, chop onions, capers and gherkins.
In a bowl, blend egg yolk, tuna, ginger into onion mixture, then add whipped cream. Whisk egg whites until foamy, then carefully mix into tuna preparation.
Preheat broiler.
Place a slice of Canadian Swiss cheese on each bread slice. Spread generously with tuna mixture. Place under broiler, with oven door open, 5 minutes or until canapés are golden. Garnish with whipped cream seasoned with Dijon mustard and decorate with a few capers.
